Soft and Crunchy Peanut Butter Cookies

These soft and crunchy peanut butter cookies are super easy to make and don’t use any flour, so they’re perfect to share with your gluten-free friends. We’ve added some chocolate chips too, for that extra little treat!

Makes 12-14 cookies

250g crunchy peanut butter
200g light brown sugar
1 large egg
1 teaspoon of bicarbonate soda
75g milk chocolate chips


1. Preheat your oven to 190°C / Fan 170°C / Gas 5 oven. Mix the egg and sugar together in a mixing bowl. Add the peanut butter and bicarbonate of soda. Mix all together before stirring in the chocolate chips.

2. Place the mixture onto a parchment-lined baking tray using a tablespoon for each cookie. Allow space for spreading.

3. Bake in a pre-heated oven for 10 minutes, or until firm and brown in colour.

4. Leave to cool on the tray and then munch away! These are the perfect after-school snack, best served with a tall glass of cold milk!
