Apple Harvest Torta

We’re loving the bumper crop of apples this fall and what better way to celebrate the fruits of the season than with an apple torta? This pastry-based treat will go down well as breakfast, after school snack and even dessert.


For the pastry:
1 tsp baking powder
160g plain flour
1 tbsp caster sugar
70 g unsalted butter
80-100ml milk

For the filling:
10 apples
150g caster sugar
1 pinch of nutmeg
1tsp ground cinnamon
20g butter, cubed


1. Place baking powder , flour, caster sugar and a pinch of salt into a bowl. Rub in the butter, add the milk and mix to a soft dough. Shape into a ball, wrap in cling film and chill for 30 minutes.

2. Preheat oven to 150°C/gas 2. Peel, core and cut apples into wedges. In a bowl, mix the sugar, nutmeg and cinnamon and add the apple wedges. Once the apples are covered in the spice mix, turn them out in a baking tin. Press the apples down, sprinkle with butter and pour 50ml of boiling water over them.

3. Roll out the pastry into a circle larger than the dish. Cover the apples with the pastry, tucking in excess pastry and moulding it to fit inside the dish. Make a few slashes in the pastry to allow the steam to escape.

4. Bake for 1 hour.
