As if we need any excuse to indulge in a bit of popcorn! With National Popcorn Day coming up on January 19th, it’s got us thinking about our favourite ways to enjoy this crunchy treat. Some like it salty, some like it sweet. We really could go either way but sticky toffee popcorn has been a long-time favourite treat at our cooking parties and the kids love to make it, so to celebrate this very serious occasion, here’s our recipe for making our sticky toffee popcorn.
First, place a medium saucepan over high heat. Add 2 tbsp oil, or until the bottom of the pan is almost covered. Then add enough corn kernels to cover the oil and put a lid on it.
Once you hear the first few pops, turn the heat down. Once the popping has slowed down and stopped, tip your popcorn out of the pan and into a big bowl to let cool.
Now it’s time to make the sticky toffee to pour overtop. Add 40g butter and 40g brown sugar and 2 tbsp golden syrup to a saucepan and stir over high heat for a minute or two. Keep stirring until it feels like all the sugar has dissolved, then add your popcorn to the pan and mix it all around with a wooden spoon.
If you want to get the kids involved, pour some toffee into a bowl with some popcorn so they can mix it themselves. Pop it back into the bowl once all the kernels are covered and allow to cool and harden before serving.
Now, just watch out for those sticky fingers!
